I might just be blind for not finding the given profile... but

A bot mode that focuses on completing the hunting log would be really great to have :)

Example, it uses the fate lvl range (example: max 5 lvls above) and if it's too low level for the next mob, it'll do nearby fates that are within the level zone and / or grind

You can easily set that up with this addon TaskManager.

I made a quick trial hunting log for Task Manager in that thread for Ranks 1-3. I never went further because I believed it wasn't too popular and tbh got bored with it because I was more interested in actually playing. You can find it in that thread on page 10.
