Any good tanking profiles for leveling in dungeons? (PLD/GLA-WAR/MRD) using assist?
if so, do I have to do the pulling myself? (i.e. using flash shield lob overpower etc.)

I believe sebb's profiles are free and pretty solid. Look under the skill manager section of the forums.

they can be used in void ark and what not right? not just dungeons?

Skill profiles are global but may need to be tweeked depending on each situation you want

Sebb, I have been using the WAR profile and it pops sprint for no reason. I cant pin point anywhere on the profile what the cause is.
