Hands down - gathering. There a lots of materials on high demand that go for good prices simply because high level gatherers wont go for it anymore. That's a beginning. Later you get a feeling for things that sell well. Watch the marketboard. Highend is aethersand, rare materials from timed nodes and so on.
But forget the 10 million gil per week nonsense. That's doable on certain servers but not so easy.

Crafting is also a good way. Dungeon farm is pretty Nice too but very risky

i made 120m in a month with a combination of gathering and crafting with the help of a friend and using all my accounts. used 4 bots. been 3 months now and have about 470m that we share. most of it is pf for doing mass craft orders of all specialist and gathering any item requested

I make between 1 and 2 million gil per day the easy way with just one account. A bit crafting and gathering but nothing that stops me from playing the game. But it took a while to find my niche.

How much can crafting be automated?
Also, desynthing stuff is also quite profitable (haven't tried it myself)
