I have beyond the min craftsmanship base, plus food and tea and the 35 specialist is just barely failing. Are you sure those are the correct min stats for it?

Wondering what is meant by this actually. Just how many hq items do I need? (Cider or example) my stats are 1560/1400/476 without food or tea so... say for Cider.. 3 hq items? 4? 5? what should I be shooting for to get like 95+% chance to hq

Add HQ mats in the recipe window and you will see the quality increase. These profiles should HQ anything with at least 9k starting quality. using full hq mats is like 13-15k starting quality

1564 Craftsman 484cp BASE. Using HQ Tempura+ HQ CP Tea,  both 70 specialist and non specialist fail on last step short of progress. Verified cross-skills were correct.
